Microgreens Amaranth Smoothie Recipe

This vibrant and nutritious smoothie combines the health benefits of amaranth microgreens, fruits, and a creamy texture for a deliciously refreshing treat. Packed with antioxidants, fiber, and essential vitamins, this smoothie is perfect for starting your day or as a post-workout snack.

Ingredients:

  • 1/4 cup amaranth microgreens
  • 1 ripe banana
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup strawberries (fresh or frozen)
  • 1/2 cup almond milk (or your preferred milk)
  • 1 tablespoon chia seeds (optional, for added fiber and omega-3s)
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • Ice cubes (optional, for a thicker, colder texture)

Instructions:

  1. Prepare the Ingredients:

    • If you haven’t already, rinse the amaranth microgreens under cold water.
    • Peel the banana and chop it into smaller pieces.
    • Remove the stems from the strawberries and chop them into halves or quarters.
    • If you're using frozen fruit, you can skip adding ice cubes or adjust to your preference.
  2. Add Ingredients to Blender:
    Place the amaranth microgreens, banana, blueberries, strawberries, almond milk, and chia seeds (if using) into your blender.

  3. Blend Until Smooth:
    Start the blender on a low speed to combine the ingredients, then gradually increase to high speed. Blend for 30-60 seconds, or until the smoothie reaches a smooth and creamy consistency.

  4. Taste and Adjust:
    Taste your smoothie, and if you prefer it sweeter, add a teaspoon of honey or maple syrup and blend again.

  5. Serve:
    Pour the smoothie into a glass, and optionally top with a few extra blueberries or strawberry slices for garnish. You can also add a sprinkle of chia seeds or even more microgreens for a crunchy texture.

  6. Enjoy:
